Creamy Cauliflower Soup

Easy, delicious and creamy - and source of brain boosting choline!

Ingredients

  • 5 cups cooked cauliflower
  • 1 tsp garlic
  • 1/8 cup onion
  • 1.5 tsp cumin
  • 1 tsp turmeric
  • 7 tbsp nutritional yeast
  • 2 cup broth
  • ½ cup rice milk
  • ½ tsp salt
  • ½ tsp mint
  • 1 tbsp olive oil

Instructions

  1. saute garlic and onion with olive oil in a large sauce pan 

  2. add in cumin and turmeric and stir for 30-45 seconds until it becomes really fragrant 

  3. add the cooked cauliflower, broth, salt, nutritional yeast and mint 

  4. let simmer for 30 minutes then using a blender or food processor, blend until it is smooth 

  5. add the rice milk and continue to blend for another minute
