These bars might seem a bit strange when you look at the ingredients but trust me, not only are they all natural, they are a delicous and filling as they are a good source of fiber and protein.  These are perfect for busy mornings, road trips and quick snacks!  They also keep well in the freezer.
Makes 16 bars
Ingredients: 1 can rinsed chickpea – blended 1 1/2 c chopped rhubarb – pulsed 1 tsp vanilla 1 egg 1/4 c honey (if you prefer a sweeter bar, use 1/3 to 1/2 cup of honey) 1/4 c coconut flour 1/2 c oats 1/4 c each sunflower seeds, walnut pieces, shredded coconut, craisins 1/2 c peanut butter Directions:
Mix the wet ingredients first, then add the dry ingredients.  Press into a 9×13 baking pan and bake 350 for 30-40 min until edges start to brown.
Per bar: approx. 140kcal, 3g fiber, 4.5g protien
Notes:
If you decide not to use coconut flour, you may need to increase the amount of other flour used.  Coconut flour is very dense and very absorbent. For other flours start with 1/2 cup, increasing if the mixture is too wet.
